Manchego Grilled Cheese Toasts with Olive Tapenade

These Manchego grilled cheese toasts smear homemade green olive tapenade over a toasted baguette slice, and melt sweet nutty Manchego cheese over the top. They are a perfect accompaniment to soups and salads, or as a tasty snack or appetizer.

Manchego Grilled Cheese

I love love love Manchego cheese. It is a sheep’s milk cheese that is produced in the La Mancha region of central Spain. Manchego is aged for different amounts of time, which affects its flavor and texture. I prefer the 12 month aged variety, as it has a drier, more crumbly texture and sweeter taste. Truth be told, this recipe isn’t really a “grilled” cheese toast, but rather a “broiler” cheese toast. However, the concept of delicious melted cheese over the salty goodness of olives and crunchy toast is just the same.

Green Olive Tapenade

Traditionally speaking, a tapenade is a French dish that contains finely chopped olives, capers, anchovies, and olive oil. A salty piquant mixture, it pairs well with sweet nutty Manchego. For these Manchego grilled cheese toasts I used green Spanish olives (try Castelvetrano or Manzanilla). You can use a food processor to make the tapenade faster, but chopping by hand is also an option.

  • 1 lemon
  • 1 cup pitted green Spanish olives
  • 1 Tablespoon capers
  • 1 clove garlic
  • 1/4 cup extra virgin olive oil
  • 1 baguette
  • 5-6 oz. Manchego cheese
  • 3 Tablespoons extra virgin olive oil
  • 1/4 teaspoon freshly ground black pepper


  • Preheat broiler on low.
  • Zest lemon and put zest in food processor with olives, capers, garlic, and olive oil. Pulse until smooth. 
  • Slice baguette and grate cheese. Brush each baguette slice with olive oil and place on a baking sheet. Toast under broiler for 1-2 minutes, then flip and toast for another minute.
  • Spread tapenade on each toast (un-oiled side), and sprinkle with grated cheese. Broil until cheese is melted. Finish by sprinkling with black pepper.
