Lemon Shortbread Cookies
With the addition of the Salvia spice blend, these cookies are perfect for tea time or a snack anytime.

Ingredients
- 1 cup unsalted butter softened to room temperature
- 1/2 cup sugar
- 1/4 teaspoon fine sea salt
- 2 1/4 cups all-purpose flour
- 1 large lemon
- 2 teaspoons Salvia spice blend
Instructions
- Preheat oven to 325 degrees F.
- In the bowl of a stand mixer, combine softened butter with sugar and salt and beat until light and fluffy. Alternatively, hand held electric mixer may be used. Blend in lemon zest and Salvia spice blend. Gradually add flour and mix until smooth.
- Once the flour is added, gently form the dough into a ball with your hands. Press into 8x8 inch cake pan, smoothing out the top.
- Bake for 35-38 minutes, until just golden on the edges and top.
- Cool about 15 minutes and cut while still warm into 16 squares. Cool completely on a wire rack and then remove from pan.
