Ground Turkey Soup Recipe

Ground turkey is an ingredient that’s easy to find in most grocery stores. However, I’ve found that grocery store ground turkey is a bland version of what I can get from a local farmer. If you haven’t tried ground turkey direct from a farmer yet, you’re missing out! If you don’t have ground turkey on hand, this recipe is also good with leftover roast turkey from holiday cooking.

How to Make a Delicious Soup

An original version of this soup that I made didn’t include the egg noodles or any carbs at all. When I fed it to my family for the first time, they suggested that egg noodles would go great in this soup, so this recipe was born! If you don’t have egg noodles, another pasta or white rice could substitute. Since the soup is so simple, be sure to use a good quality chicken or turkey broth (homemade is good). I find that the lemon juice is really key for giving this soup a “zing” of flavor. Also, be sure to add the Herbes de Méditerranée at the beginning of the recipe as directed, as this will help “bloom” the herbs and give the best flavor to the soup.

  • 1 small onion
  • 2 cloves garlic
  • 1 Tablespoon extra virgin olive oil
  • 1 1/2 teaspoons Herbes de Méditerranée
  • 1/4 teaspoon kosher salt
  • 5 cups chicken broth*
  • 1 pound ground turkey
  • 8 oz. egg noodles**
  • 1 14.5 oz. can cannellini beans
  • 2 cups fresh baby spinach
  • 1/2 lemon


  • Dice onion and mince garlic.
  • In a large soup pot, heat olive oil over medium heat. Add diced onion, garlic, Herbs de Méditerranée, and 1/4 teaspoon kosher salt. Cook for 5 minutes, stirring occasionally, until soft.
  • Add chicken broth to the pot and bring to a light boil.
  • Using a one teaspoon measuring spoon, drop bite-sized pieces of ground turkey into the broth. Simmer gently for 10 minutes, until mostly cooked.
  • Add egg noodles and cook 6 minutes or so, until just soft. Add beans, spinach, and juice of 1/2 lemon. Taste and add more salt and freshly ground black pepper if desired.


*This amount of broth makes a thicker soup. If you want more liquid, add another cup of broth.
**Optional. 1/2 cup white rice may also be used as a substitution
